Elaboration and aging
- White Vinification: After destemming the grapes, the vinification process is carried out in stainless steel tanks for 15 days at a maximum temperature of 14ºC.
- Rosé Vinification: After destemming the grapes, the vinification process is carried out in stainless steel tanks for 15 days at a maximum temperature of 26ºC.
- Rosé Aging: Aging: Once the maceration-fermentation process is completed, this wine is aged in new French oak for malolactic fermentation.
Pairing
- Traditional: Añojo chop, angus picaña, suckling pig,…
- Vegan: stews with tempeh or seitan, vegan meatballs, stewed beans or vegetable sobrassada.
Storage
It is essential that the cork remains moist, which is why it needs to be in contact with the wine, hence the need for it to be stored in a horizontal position.
