Elaboration and aging
- Vinification: After destemming the grapes, the vinification process is carried out in stainless steel tanks for 15 days with a maximum temperature of 26ºC.
- Aging: Once the maceration-fermentation process is completed, this wine ages in new French and American oak, where it ages in aging rooms absent of light and sound for 12 months.
Pairing
- Traditional: Añojo chop, angus picaña, suckling pig,…
- Vegan: stews with tempeh or seitan, vegan meatballs, stewed beans or vegetable sobrassada.
Storage
It is essential that the cork remains moist, which is why it needs to be in contact with the wine, hence the need for it to be stored in a horizontal position.
